Squash, Feta Cheese & Ricotta Rolls

These flaky rolls are a real treats, bursting with flavour and veggie goodness! 
Great hot or cold.
Serves 6  ( 2 each = 12 rolls )
Preparation time 15 min or less
Cooks 25/35 min


  • 2x 320g pastry ( GF or V)
  • 1 egg, lightly beaten


  • 2 TBSP good olive oil
  • 1/2 raw squash, in little chunks
  • 50g raw kale, with no stalks
  • 100g raw broccoli, finely chopped
  • 115g baby spinach
  • 250g ricotta
  • 200g feta cheese, roughly chopped
  • 40g toasted pine nuts
  • 1 lemon, zest


Preheat oven @200 degrees 

Cover a large over tray with baking paper.

Filling: Heat the olive oil in a large pan at medium heat. Add the squash,the kale, the broccoli and cook gently until it appears soft. Turn down the heat and stir in the spinach leaves bit by bit, and stir until all mixes well. Now add the ricotta, the feta cheese the pine nuts and the zest of a whole lemon. Season and combine all well.

Cut the pastry vertically into 3, spoon 1/4 of the filling in the centre, but from the start to the finish of the pastry length. Do the same for the other strips of pastry.

Do the same for the second pastry, so to have 6 long strips of pastry filled with filling.

Use the egg to seal the pastry when folded, so to have 6 rolls completely sealed.  Now cut with a sharp knife into 3 smaller rolls for each pastry packet used.

Transfer into baking tray and bake for 25/35 mn or until golden brown.

Enjoy hot or cold.

What's life without mayonnaise? Is it really worth to even eat? 

I adore mayonnaise and who invented it need a medal! But what if you decided to remain vegan for as long as you can or even for life? Is there any vegan mayonnaise worthy to buy? I investigated the matter and here is my review:


 egg free vegan organic mayonnaise by mr organic

This vegan egg free mayo, has an uncomplicated flavour, not bland, in fact has a quite full round flavour yet delicate, thanks to the organic sourced ingredients. Its quite creamy and makes you want to deep your face in if you could (i love mayo guys!)  

Quite what you need for a vegan chicken sandwich with gherkins perhaps! I loved this one! 180g in a glass jar - widely recycled all over uk - for £2.99 and it's plant-based. Quite reasonable priced. Here the full list of ingredients for the vegan egg free mayonnaise: 

Sunflower oil*, water, apple vinegar*, maize starch*soy flour*, salt, cane sugar*, lemon juice*, thickener: guar gum*mustard*, acidity regulator: E330 | *= produced to organic standards


Organic Egg Free garlic Mayonnaise Mr Organic 180g

This vegan egg free mayonnaise has a subtle hint of garlic, making everything more exciting not only in a sandwich but also over boiled meat and even on fish. So i guess whenever you need a lift to any dishes you are better off with this one.

Love this plant based mayo on a thick slice of beef, its just what the doctor ordered.

Plant-based, 180g in a glass jar, widely recycled all over uk - £ 2.99. Again you have great value for an organic sourced ingredients vegan mayonnaise. Everyone in the family will love this one as well.

Plain plant based vegan mayonnaise by Inspired Vegan

 Right, this one is truly lovely and it goes well with many foods too but i found that is slightly on the "acid" side. Still is lovely and for 200g glass jar a £ 2.65 is quite convenient priced too.  I know some wants to read the vegan mayonnaise ingredients so here they are: Rapeseed Oil (55%), Water, Cider Vinegar, Faba Bean Protein, Sugar, Dijon Mustard (Water, Mustard Seeds, White Vinegar, Salt), Lemon Juice Concentrate, Salt, Cornflour, Stabiliser: Xanthan Gum, Natural Colour: Beta Carotene. My daughter Sofia just love this one more than anything else tested so far!

vegan smoked garlic mayonnaise by Inspired Vegan

 If you fancy the mild, clean flavour of smoky garlic that hits you better afterwards and a custard cream texture, this is for you. Mellow but delightful. Very convenient price, £ 2.65, for a 205g glassed jar of goodness.

vegan coconut lime and chilli mayonnaise by inspired veganI am not a fan of chilli but i know that many out there loves chilli. In this vegan chilli mayo you can be sure to taste it without being overwhelmed, so if you are a mild chilli lover this is great. Quite refreshing. It goes well with fish i have found, with any fish in fact both white fish and salmon. Personally I am not sure if complemet well meat. Great price - only £ 2.65 - for a 200g glass jar. Creamy texture, slightly runny.

vegan chilli mayo by inspired vegan

Absolutely pleasant, quite a treat infact. I have found this to be very satisfying even just by itself, but on a humble toasted bread is actually quite divine. That'a a meal on itself. Tasty, with a sweet/chilli taste on your tongue. You cannot get enough of it, and it goes well toasted bread, focaccia and as a dip so fantastic on chips and jacket potatoes! Your teenager will love this baby! £ 2.65 for 210g glass jar.
