Cashew and Coconut Cream Lime Cheesecake NO BAKE
For all the lovers of cheese cakes!
Are you diabetic or on a low sugar diet? Need to take it easy on carbs? Here is a perfect 'cheesecake' for you to make at home and indulge in. Easy, no bake that you can make in no time.
No milk, no sugar but yes! flavour.
Ingredients:
Base:
- 180g Cashew Nuts - Soaked in hot water for 15-20 minutes
- 1 - 2 TBSP Almond Milk
Filling:
- 250ml of Coconut Cream
- Zest of 1 Lime
- Freshly squeezed juice from 1 Lime*
- Stevia - You can add to your likings - I don't have a sweet tooth so i only added 1 TBS and I can taste the sweetness just about -
- 1/4 TSP Salt
Optional:
- Some dark chocolate - for grating on top
Method:
1) Once the cashews are done soaking (they should be bendy but still slightly crunchy), drain them and wait to cool down before blending. While blending, The cashews should turn into a nice but thick creamy texture. (if it's hard to blend, add some of the almond milk)
2) Add all the filling ingredients into a bowl and mix together until creamy.
3) Take your blended cashews and put it into a pie dish (approx. 9 inches). Flatten the cashews with a spoon until it covers the base of the pie dish evenly.
4) Then add your filling on top and spread across evenly. (You can grate the chocolate on top now, too)
5) Freeze for 6 hours or overnight. Then, transfer to the fridge* (if still frozen when you want to eat some, take it out into room temperature and let it thaw before slicing)

*Once defrosted do not put into freezer again.
*If you wish you can add more lime according to your likings but then remember to add a bit extra Stevia to balance the acidity of the lime.
