In a Rush? Quick Dinner Ideas for Tonight
Simple dishes to make for an easy monday or saturday night dinner
If you like me at times forget to do shopping and running low on groceries or too tired to think of what to do for dinner, i always do this simple easy dish that require no supervision with just a very few ingredients. Pair this up with sausages, maybe eggs or even vegan cheese to spread on your favourite bread or crackers and you are done!
Here an easy dish to make at home :
VEGETARIAN & VEGAN THICK SAUCE
6 big carrots
1 big onion peeled and chopped
olive oil [coconut oil works well too]
almond or cashew milk
flavouring or herbs or even your favourite curry powder
Put the chopped onion in a medium flat pan along with oil [or coconut oil ] with a half of glass of purified water. Let it simmer for a good 2 minutes.
In the meantime peel and chop the carrots, then add them to the pan. Add a good 3 full glasses of milk [whatever it is that you choose] Add salt, some flavouring or/and herbs. Put the lid on, leave on medium low heat.
Check it out now and then to stir, see if it needs extra salt or herbs or anything else you fancy to add like a dollop of your favourite vegan cheese for added flavour.
As soon as the carrots are cooked, give it a quick blast with the hand held electric blender for a smoother finish. If you wish you can add some ghee, for extra flavour.
