Easy Meal to Prepare & Incredibly Tasty!

Tomatoes are not just extremely sweet and juicy, a real pleasure to eat once fully ripen, tomatoes are the major dietary source of the antioxidant lycopene, which has many health benefits, including reduced risk of heart disease and cancer. It also contein lutein, a carotonoid that can prevent prostate cancer. It also contains a fan of various nutrients, important for your health.

Ingredients :                                                                                            Serve 3-4

 250g (8 oz) Cherry Tomatoes

A Handful of Rosemary Herb

2 Tsp Organic Olive Oil

 1 Gluten Free Shortcrust Pastry

Cornflour for dusting

100g (3 1/2 oz) Soft Goats Cheese,in small pieces

3 Eggs

60ml (s fl oz) Almond Milk or any other alternative you may prefer

Salt & Pepper 

 Method :

1 Preheat the oven to 120 degrees ( 250F) GAS MARK 1/2

2 Put  the Rosemary herb on top of the tomatoes in a small roasting tin. Drizzle with the Organic Olive Oil. Toss them gently and bake for 30 minutes.

3 Roll out the pastry and flatten it to a 4mm (1/4 inch) thickness. Use Cornflour to dust gently the surface before working on it. Then Line a 20cm (8 inches) tart tin with baking paper, then lie the pastry nicely inside the tin. (Cut any excess sticking out of the tin)

4 Scatter the goats cheese evenly all over the surface.

5 Beat together the almond milk + the eggs + salt & pepper. Tip the roasted tomatoes inside the pastry tin. Add also the egg/milk mixture.

6 Increase the oven temperature to 180 degrees (350F) GAS MARK 4 and bake for 30 minutes until the pastry is golden and the filling is set nicely.
