If you are in a rush, this gluten free polenta with porcini mushrooms is ideal. it cooks in few minutes and it's great with both meat or fish or simply with fried eggs on top and few vegetables on the side. 150g is sufficient for 2 people. An italian delicacy!

1) Bring 750ml salted water to boil in a saucepan.
2) Add the pack contents, stirring continuously and reheat. Simmer for 10 minutes, stirring frequently.
3) Stir in the olive oil and serve immediately garnished with grated Parmesan cheese.
Alternatively, pour into a tray and leave to set. Slice and fry 3-4 minutes each side.
Store in a cool, dry place. Once opened, use within 14 days.
